Banana Chocolate Chip Muffins

Here is my all time favorite kids recipe! My kids will eat anything if I baked it in mini muffin tins. I took grandma's recipe and cut the sugar and oil in half and came up with these little gems. Enjoy!

BEST WHEN HOT.
2 eggs
¾ c oil
¼ c water
1 TBS vanilla
3 ripe bananas (any size)

1 1/3 c sugar
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1 tsp cinnamon
½ tsp allspice
½ tsp nutmeg
¼ tsp cloves
3 ½ c flour

1 c chocolate chips
½ c nuts, optional

Mix all wet ingredients first. Beat until frothy. Add all of the dry ingredients and stir until well mixed. Add the chocolate chips and nuts last and mix in with a spoon.
Bake at 350 degrees.
15-20 minutes for mini-muffins
20-25 minutes regular size muffins
45 minutes bread loaf pans

Sour Dough Bread

We have discovered sour dough bread! After watching videos on Youtube.com we made some starter and have been baking incredibly wonderful bread ever since! Here is our favorite recipe!

1-2-3 No Knead Sour Dough Bread

1 c sour dough starter
1 c water
2 tsp salt
3 c flour

Mix all ingredients together in a big bowl. Stir until all the flour is mixed in. Put in a bowl and cover with a lid. Let rise on the counter for 8 hours or turn on the oven for 3 minutes. Turn oven off (this heats it up). Put covered dough in. Let it sit overnight.

To Bake:
1. Put large pot and lid in oven. Preheat oven to 500 degrees.
2. Pour dough out onto floured countertop. Pour carefully, try not to break any air bubbles.
3. Flour hands and fold dough over itself 4 times.
4. Open oven and carefully place dough into hot pot. Put on lid--watch out it is HOT!
5. Bake 15-20 minutes with lid. Then, turn down heat to 450 degrees and bake 15 minutes.

Comes out crusty! YUM!
